Even with just taking it out of the can and seasoning it with lemon juice, salt and pepper.</div><div><br></div><div>Anyways, simple easy bites. Tuna pastries. You can whip them in no time. Delicious the way it is or with a simple dip.</div><div><br></div><div>Ingredients:</div><div>- 2 cans of tuna in water. (Healthier option)</div><div>- 3 table spoons of mayonnaise</div><div>- 1 lemon juice</div><div>- 1/3 Kraft cheddar cheese shredded</div><div>- 1 large carrot shredded</div><div>- 1 large spring onion chopped</div><div>- salt and pepper</div><div>- 1 packet of puff pastry (I used light)</div><div>- 1 hot green chili sliced finely (optional) </div><div><br></div><div>Method:</div><div>1- I left the pastry dough slices melt into each other and rolled it out on a bed of flour and cut the dough into circles.</div><div>2- In another bowl, mix all the ingredients perfectly.</div><div>3- Fill your thin circles of pastry with the tuna mixture. Close the circles the way you wish. Do not add more oil but pour the marinade to the fish on the pan.</div><div class="separator" style="clear: both;">5- place the half cooked fish fillets over the onion on the Pyrex.</div><div class="separator" style="clear: both;">6- in another deep pan, put two spoons on butter and add the salt. Then add the cream milk and the rest of the lemon juice. If needed season with more salt and pepper. Also, add half of the chopped coriander. Let the mixture heat until it boils and pour to the bed of fish in the Pyrex.</div><div class="separator" style="clear: both;">7- cover the Pyrex with aluminum foil and put in the oven for 20 mins. We normally end up making berries sauce a reduction of mangoes and so on. But it seems that we forget the delicious taste of cherries. My nice made those lovely cups of cheese cake so I told her, I would help with the toppings. Along with some berries sauce, I made cherries sauce and a reduction of passion fruit. How to make cherries sauce, simply its all one whole step.<br />
<br />
Ingredients:<br />
- Halved cherries with the seed out<br />
- Sugar<br />
- Some water<br />
<br />
Method:<br />
On a pan, put sugar and the cherries and few table spoons of water or almost 1/4 a cup, let it simmer until the sugar, water and cherries become slightly thick.<br />
<br />
Serve on any type of dessert you wish. I would do with some vanilla ice cream. or chocolate mousse.<br />

Day 2 and the journey keeps going on. Well for today I present to you a delightful dessert that is fulfilling but light and not very sweet. Again it is a family favourite as we have diabetes running int he family, we try to reduce as much sugar as possible or use alternatives. Ok, back to what is important, how do we make a healthy and light in sugar rice pudding.<br />
<br />
Ingredients:<br />
- 1 liter of Milk (low fat if you may)<br />
- 1 cup of egyptian rice<br />
- 1/2 cup brown sugar (I used the diet one)<br />
- 2 tbsps rose water<br />
- Zafron<br />
- Chopped almods for garnish (optional)<br />
<br />
Method:<br />
1. Wash the rice and let it bath in water over night or for at least couple of hours.<br />
2. When ready to cook the rice, in a deep pan pour the milk and mix the sugar in it until it melts on the oven.<br />
3. Sieve the rice from the water bath and add it to the milk mixture on the oven.<br />
4. Let is cook for around 30-40 mins on low temperature while stirring from time to time.<br />
5. When the rice is cooked, it will absorb the milk mixture and becomes sticky, turn off the oven and add the rose water and zafron.<br />
6. Stir couple of times, and scoop the rice pudding in the serving bowls you wish.<br />
7. (optional) sprinkle some chopped almonds on top of the rice pudding for garnish.<br />
8. Serve..<br />
<br />
I personally put them in the fridge to cool down. Sometimes I like having them hot. Depends on how you wish to serve them.<br />

I start this Ramadan with something that everybody loves in the family especially my mother. It has become a tradition in our house to bake cream caramel from scratch. We actually buy the packed ones not to eat them but to create other desserts from it. The pictures shall guide you to the simplest recipe to make and present as a light and delightful dessert.<br />
<br />
Ingredients:<br />
- Because I'm using home eggs (our own chicken's eggs home produce) they are tiny, so I put 4 to 5 eggs.<br />
- 1 can of Sweetened Condensed Milk<br />
- 1 can of water.<br />
- 1/4 tsp cardamom<br />
- Zafron<br />
- Around 1/2 cup of sugar<br />

5. on top of the caramel, fill the pan the caramel mixture and put them in a bath of another baking pan and into the oven for 30-5mins on temperature 350F (180C)</div>

6. Bake, make sure you check on the cream caramel, if mixture if firm, then its baked well enough. <li>1/2 cup frozen spinach</li>
<li>3 tbs flour</li>
<li>3 tbs butter</li>
<li>3 cups of milk</li>
<li>1 chicken stock cube (maggi/ knorr) I like knorr.</li>
<li>1 egg</li>
<li>black pepper</li>
<li>chopped onion</li>
<li>mozzarella cheese</li>
<li>cumin powder</li>

<li>2/3 cup really cold butter cubes</li>

<li>Mx the salt and flour together</li>
<li>add cubes of butter and mix using a knife (as if chopping the butter in the flour)</li>
<li>add the cold water and mix using a ford until the batter is more of a proper dough (you might need more iced water)</li>
<li>wrap your dough in cling film and keep it in the fridge until the time of baking to cool off a bit. Take pieces of dough in the cupcake or muffin tray and spread them around using your fingers. (easy much). Poke your dough cups using a knife</li>
<li>bake your pastry cups for 10 mins or until they become golden brown</li>

<li>Use a bechamel recipe and follow the steps, only difference is to add the egg, the chicken stock cube and black pepper.</li>

<li>Oil in a small deep pan, add the onions and let brown a tiny bit</li>
<li>add the spinach to it</li>
<li>add the salt, pepper, and cumin and stir</li>
<li>keep it on low temperature until the water released from the spinach dries out</li>
<li>shred some mozzarella cheese and then add the spinach to the cream mixture along with the spinach mixture. (all together)</li>
<li>fill your baked pastry cups with your cream spinach mixture and sprinkle some cheese. Put the tray back in the oven until the cheese melts and becomes lovely brown.</li>

Another simple and in the oven recipe. <br />

Clean your shrimps, put them in a bowl, 3-4 tbs olive oil, 1 lime juice, salt and pepper, soy sauce. Leave it to marinade for some time.<br />

Stack your shrimps on sticks and and place them on a baking tray. <br />
<br />
Put the oven on 350-375 degrees, spray your shrimp sticks with more olive oil and put the tray in the oven. <br />
<br />
Let them grill, flip them when they become golden brown from one side., until both sides look golden brown and your shrimps and mouthwatering. <br />
<br />
For the dip, use low fat sour cream, finely chopped chives and finely chopped dill, some salt. Mix them together and serve with your shrimp skewers. <br />

Method:<br />
1- boil your tomatoes, skin them, dice them and put them back in the pan.<br />
2- add as much olive oil you like, salt and pepper and some oregano.<br />
3- crush the tomatoes, let it simmer until the tomatoes become a bit thick and more of a paste.<br />
4- slice your baguette, place them on a baking tray and sprinkle them with olive oil.<br />
5- add some of the tomato paste on each slice and put plenty of mozzarella cheese.<br />
6- sprinkle with oregano and in the oven the tray goes.<br />
7- the cheese melts and becomes golden brown, that when your easy and quick pizza is done and you are to.<br />

some veg oil and sesame oil in the pan, and stir up your onion and when it quite tender, add your chicken with its marinade. There will be water coming from the chicken along with the marinade so no worries, it makes the everything even better.</div>

When adding the noodles on top of the mixture below in the pan. Put the oven on very low and cover the pan. The noodles will cook alone. After some time, mix it all together. The noodles will become tender and lovely then you are all ready to serve. Well before doing that, make sure you check that everything is seasoned well. If its not then use the chicken stock cube with some water, and drizzle some soy and very little oyster sauces and in the end a few drops of sesame oil.</div>

One of my all time favorite is a sloppy joe. As greasy as ever and with lots of melted cheddar cheese would fix my mood and let me hanging there with ecstasy.<br />

Before I started working on my salad and soup diet, which also included grilled meat and low fat diaries, I rewarded myself with an amazing sloppy joe. and here I am sharing my recipe.<br />

Ingredients:<br />
- tomatoes<br />
- medium sized onion chopped<br />
- 2 -3 cloves of garlic<br />
- butter and olive oil<br />
- 1 can of kidney beans<br />
- 1 cube of chicken stock melted in some hot water<br />
- tomato paste<br />
- salt and pepper for seasoning<br />
- cream cheese, i used Philadelphia cheese<br />
- chopped parsley<br />
- cheddar cheese, grated<br />
- minced meat, it doesn't matter what type, it can be mutton or beef<br />
- burger buns or small buns, depends on what you like<br />

Moist, right amount of flavors, fulfilling, freshly baked bread and long queues, that calls for a Shish Shawerma.<br />

I've been introduced to this place by my brother one day and ever since, I got hooked. Honestly, the best thing to by from that shop is the Chicken Shawarma. It is well spiced and sauced and the bread is amazingly fresh. I don't recommend the beef or mutton one, it is just so tough. The flavor is great but the meat is so strong you end up swallowing rather than chewing and enjoying your sandwich.<br />

I've been on lots of dine outs every since I got injured. Either ordering in or going out alone or with company to restaurants. Yes I can't deny I turned to a balloon who can hardly shift from one place or another, but the pleasure I always get from eating is just an bearably overwhelming.<br />

Now I will be posting reviews as much as I can of the places I visited. For today it is Zaroob.<br />
<br />
The hype about Zaroob been going on for sometime. Everybody recommended it. Lebanese authentic food in a pop cultural way. Naa Naaaaa. That's all wrong. First it is Egyptian Pop, not Lebanese. It is not this close to being authentic. The service was alright regardless of the jumping waiters and the way they served. I personally see them as aggressive and clumsy (دفشين) in the way they were serving the food.<br />
<br />
What did I choose to eat? Koshari. And how was it? Not spicy, too oily. The only pleasant thing about it is the crispy onion on top.<br />
What else? Fatoush. Yeah this is the plate I enjoyed most.<br />
The Shawerma on the coal. It was really good. I bet the sandwiches are good too. I still have to try the mishaltet pastry to be able to judge.<br />
The Homous.... Not that good at all. Too much olive oil can be urgh. <b>URGH</b>.<br />
The juices were fresh, that was pleasant.<br />
<br />
Ne ways, as an overall rate for Zaroob, I personally give it a 7.5/10. Maybe I will change my mind when I try the sandwiches and mishaltet. I loved the atmosphere and the presentation of the shop, that could be why I rate the restaurant as 7.5.<br />

Well, I didn't think much about the recipe,I just had my hands working and the result became Chicken Pesto Skewers (Grilled). I'm bad with presentation but the food is good, so let us focus on the taste of the food.</div><div><br /></div><div>Ingredients:</div><div>- Chicken breasts (cut into moderately medium cubes)</div><div>- Pesto Sauce</div><div>- 1 lemon</div><div>- Salt and Pepper (for seasoning)</div><div>- Olive oil</div><div>- Can of 7up</div><div>- Sticks</div><div><br /></div><div>Method:</div><div>1- Put the chicken cubes in a large bowl and pour 1/2 to 3/4 of the 7up over the chicken. (This makes your chicken tender very fast.) (keep it on a side for 15-30 minutes at least.</div><div>2- Drain the chicken cubes using a sieve. Wash the same bowl with water and place the chicken back in the bowl.</div><div>3- Season with salt and pepper + squeeze the lemon juice on the chicken + add 2 table spoons of olive oil and mix them together. </div><div>4- Now it is your choice how much pesto sauce you want to put. I put around 3 -4 full table spoons to keep the flavor in. Mix and cover the bowl with plastic and keep it in the fridge until it is time to grille. </div><div>5- You can use the oven or use the griller (the griller is a better choice) and on charcoal even merrier. Set up the way you want to grille your chicken and keep it hot, chicken is easily cooked.</div><div>6- Get you sticks ready, your chicken from the fridge and insert few cubes of chicken on every stick. When your sticks are ready, off to the grille.</div><div>*note, if you don't want the sticks to burn, soak them in water.</div><div>7- Rotate your chicken sticks every few minutes and when they look browned, then they are ready. (remember you added 7up in the beginning , which makes it easier to handle your chicken or any type of meat.</div><div>8- Serve. ( you might want to fry some french fries or potato slices to serve them with your skewers)</div><div><br /></div><div>*Note: you can also fry the chicken skewers instead of grilling them. Sometimes, it is compulsory on the menu. Mainly because my father used to be a fisher in the old days when pearling was the big thing. Ne ways, so we are used having fish all the time and when these days comes, we always look for an alternative meal. Today, was no exception as I've had enough of fish with rice. I wanted something different. I spotted some organic basil and tomatoes in the fridge. It just came to my mind that I should prepare some pasta with those lovely tomatoes and fresh basil leaves. Let me give you examples.</div><div><br /></div><div>How many times have you grilled chicken and nobody ate it or let us say a large portion was left behind?</div><div>Ever thought of recycling that chunk of meat into something much more edible? </div><div>How about preparing, shawerma sandwiches with it? or a pasta mix, even something easier chicken soup with mushrooms or any other type of soup?
