Ingredients:
400g Lady fingers
400g Mascarpone cheese
4 eggs (separated)
100g sugar
Espresso or strong black coffee
Cocoa powder
Preparation:
- Beat the egg yolks with the sugar then whisk in mascarpone.
- Beat the egg whites until it becomes fluffy
- Add the egg whites to the mascarpone mixture and mix
- Dip the lady fingers into the coffee and lay it in a plate*
- After making one layer of lady fingers, add half of the mascarpone mixture over it
- Place another layer of dipped lady fingers and add the remaining mascarpone mixture over it
- Sift cocoa powder over the whole surface
- Refrigerate it until serving time
*Note: dip one at a time and don't let it soak in the coffee
**Note: you can add a little vanilla extract to the mixture to avoid the smell of eggs
